Pork Roll is proudly synonymous with the state of New Jersey and has its origins in early Colonial America. Before 1900, barrel pork was the cured meat of choice in the United States which was cuts of pork placed in a barrel filled with a flavorful brine of salt and sugar.

In fact, until the age of refrigeration, Americans preferred pork to any other meat since it could be easily cured with salt. This curing process would allow the meat to be stored well beyond the butchering season that took place in the autumn or winter months.

Taylor Pork Roll is a proprietary preparation of cured pork originally invented by John Taylor.

In 1906 and after the Federal Meat Inspection Act, John Taylor’s son, William, who had previously taken over the company from his father, was obliged to change the name to Taylor Pork Roll from Taylor Ham because the pork product was not technically a ham.

To help promote the newly named Taylor Pork Roll product, William Taylor invested in an advertising campaign with key businesses and in strategic locations that included the Pennsylvania Railroad, the Jersey Shore and the Trenton State Fair.

After World War II, fresh pork, which had been a highly seasonal product, gained in popularity with respect to the cured preparation and barrel pork disappeared.

Nevertheless, Taylor Pork Roll, as a preparation of cured pork has been continuously produced year around for the last 168 years and is loved and enjoyed by people of all ages.
